I've never tried it, but I am wondering if NAT Virtual Interface will do
the job too

It is documented as to be used in cases of multiple VRFs, but I wonder
if you just define it and then just do ip nat source static.  

Yes typical NAT on stick will definitely do it but questions begat more
questions. :)

Policy based routing will do the job for you in the cisco world.
